If you like the combination of chocolate and banana, this recipe is for you! It is “Mad” delicious as my kids would say!
1 3/4 Cups flour
1 tsp. Baking soda
1 tsp. Baking Powder
1/4 tsp salt
Sift all dry ingredients in a large bowl. Set aside.
In a mixer, mix the following until light:
1 Stick softened butter
1 Cup sugar
2 Large eggs
1 Cup ripe mashed bananas
2 Tbsp. lemon juice
1 1/2 Tsp. vanilla
Gradually add the flour into the wet mixture until well blended. Once blended, add in 1 cup of semi-sweet or milk chocolate chips.
Pour into a well-greased and floured loaf pan. Bake for approximately 1 hour-15 minutes or until tester comes out clean.
Cool on rack for 30 minutes and then invert onto plate. Move back to rack to completely cool.
-If you don’t have time to let it cool before serving, slice directly from the loaf pan
-If the loaf needs more time to cook and the top is becoming too brown, place a piece of foil on top to prevent further browning or burning
-Be sure the pan is well-greased and floured as the chocolate chips will stick to the bottom.
